Canadian Shield Whisky is made from a blend of malted barley, rye, and corn grain, which strikes us a kind of bourbon-esque high-rye style of whisky. It is named for the Canadian Shield, the large area of exposed volcanic rock encircling Hudson's Bay.
Domaine Pinnacle was founded in 1859 based around a 430 acre apple orchard in Quebec owned and operated by Charles and Susan Crawford. The name comes from the nearby Pinnacle Mountain. They began producing wine in 2000 and since has produced and overseen several different styles of spirits.
