Ark Spirits was founded in 2010 and is the venture of two brothers from Brazil: Cassiano and Rafael Agapito. Their goal is to make available to the world handcrafted Brazilian spirits made by local artisans.
Fuba Cachaca is their take on that most famous of Brazilian spirits: the rum made not from molasses but the freshly pressed juice from sugar cane. It was first offered in the fall of 2011 and they call it "full flavoured" and having a "fiery character." It is made in traditional, small-batch process from pot stills and offered un-aged ("plata" or "silver" style)... the sugar cane itself is harvested locally from Sao Paulo. The name "Fuba" is a reference to a mixture of corn meal that is included with the fermentation mash with the sugar cane, which we take to mean tends to smooth out and sweeten the spirit. They suggest looking for flavors of peppercorn, licorice, and roasted almonds. The bottle was designed by Lisbon artist Valdemar Doria.
They recommend the drink in a Fuba Smash cocktail, which calls for lemon, basil, and sugar in addition to a measure of Fuba.
