Glendalough 7yr Single Malt Irish whiskey is aged for a number of years that the distillers find distinctive for the figurehead of St. Kevin: "Tested through 7 sharp winters and inspired by the blush of 7 summers, it shaped him to be the man we revere. This whiskey was made in the traditional style its character shaped by 7 years. Have a look on our bottle, you’ll see 7 silver crosses. These will lead you to each of the 7 churches, should you ever be stirred into going to Glendalough." The whiskey itself is made from a base of 100% malted barley, sourced from an unnamed local distillery (Kilbeggan/Cooley?) and then given a final aging and bottling on site at their own distillery.

Glendalough Distillery was opened as an independent craft distillery to "recapture Ireland's lost heritage of great spirit production." It is named for the beautiful Glendalough Valley, which translates as "the glen of two lakes" and named for a valley in Ireland. The labels feature St. Kevin of the 6th century, who lived in a cave in the valley. Legend has it that he was so still a blackbird nested in his hand. It was founded in 2011 by Donal O'Gallachoir, Brian Fagan, Barry Gallagher, Kevin Keenan, and Gary McLoughlin.
