Thin Irish Dry Gin is named for Isaac Thin, a reported New York-born chemist and a seducer of women who came to be known in Waterford, Ireland. The gin itself is made with juniper, chamomile, orange, heather blossom, gorse, apple, mugwort, tansy, lime, hawthorn blossom, spearmint, thyme, and elderflowers (plus other unnamed botanicals). This is a a very unusual botanical mix, highly floral with several elements peculiar to Ireland.

Blackwater Distillery (also Blackwater Spriits) was founded in 2015 by Peter Mulryan in the West Waterford area of Ireland, which they regard as premium growing grounds for grain and dedicate their spirits to that terroir. It is named for the Blackwater river, which is said to be famous for both salmon fishing and trade.
