Wild Turkey 81 is a lower-proofed launch of bourbon whiskey from Austin Nichols of Kentucky. In keeping with their famous and widely known "101" whiskeys, this is a milder proof of "81" (as opposed to the more traditional 80). As a bourbon, its grain bill will be at least 50%+ of corn (a sweeter style of grain) but also contains a proportion of high-rye that is meant to give it a spicy and robust flavor.
Wild Turkey got its name in 1940 when Thomas McCarthy (then executive of Austin Nichols) pulled a bottle of bourbon from his warehouse for an annual wild turkey hunt... the next year, they requested "that wild turkey bourbon!"The quintessential American brand is owned by Italian-based Gruppo Campari in 2009 (acquired from Pernod Ricard).
